These quick ramps are easy to preserve the unique taste of wild leeks all year round.
It’s the most exciting time of the year, when disasters happen in the spring soil and it’s time to go hunting.
But like all great things disasters are around for a short time, just a few weeks.
This is why I love pickled ramps so much.
Instead of going hunting and eating ramps every day for two weeks because you don’t want them to go bad, you can relax and enjoy them all year round.

What are Ramps?
Disasters, etc allium tricoccumalso known as wild leeks or wild garlic.
Although they are most popular in Canada and the northern US States, they are also known in other countries as wild onions, ramson and leeks.
In Ontario they grow wild and it is legal to pick them.
But that’s not the case in Nova Scotia or Quebec, where overeating has led to near-extinction.
For this reason, you should be careful to buy it yourself from food buyers or forage ramps.

How Long Do Ramps Take?
It’s not that the time of disaster is short, they don’t last long in the fridge.
You have four days eating them fresh.
Like most greens you should store a damp paper towel in a plastic bag in the fridge, but don’t seal it.
Make sure everything in the fridge is sealed because disasters are very dangerous. As soon as you open the door you will be hit by the wonderful smell of garlic-onion.
Although the diving season is short, random selection of ramps are easy to make at home and are better than cold windows.
Freezing it works if you just wash them, but I don’t like the way it looks when it melts.
To freeze the ramps, blanch them first and then place them in a single layer on wax paper.
Make sure they are separated. After a few hours you can transfer it to a container or cooler bag.
Ice storms protect them for months.
Eating Wild Food
My first time eating wild food was mushrooms in Spain (here’s a video of it) and I was hooked.
I brought that love to Canada and was able to eat it in Ontario for a few years, mostly ramps and wild ginger in the spring and then mushrooms in the winter.
I was lucky enough to find a secret place, where no one had ever eaten before so once you find a lot of disasters it goes on for years.
The diners are more protective of their place than anyone I’ve ever seen because it’s so special to find something.
The only reason I went mushroom hunting with my friends in Spain was because they knew I couldn’t find the place on my own!
If you can’t find ramps on your own most farmers markets will have them in season.
Many people who build their businesses from forage and wild plants are now spreading the seeds across Ontario to help prevent overeating.

Breeding Ramps Recipe
If you have a quick recipe for pickles it is easy to use this recipe. Simply pour water on the ramps and refrigerate.
Ramps work well with leaves, no need to remove them.
However, after the first time pickling ramps, the reader said that the blanches and ramps are the first to fit more in the jar.

Brewing jars are more expensive and that means you can put more disasters in a quart jar.
After washing the ramps and removing any roots that may be attached you can put them directly into the container.
This recipe uses cider vinegar but red wine vinegar is great and makes the jars a pretty pink color. The ingredients are variable in the pickle recipe.
Red pepper or bay leaves are also a great addition.
When you’re done using fried ramps, don’t even think about throwing away all the delicious juices.
It’s great to use in recipes that call for vinegar and has a mild onion flavor.

A quick recipe that keeps in the fridge for weeks to months.
You have to make sure that you put a clean container in the container every time or you can damage the ramps.

Many farm stores like Lynn River Farm in Perth County sell their own stock.
Farmers markets are great places to be, especially after a bad season.
But if you don’t buy them in the spring it is unlikely that you will find them because they are so popular.
